Smoked Adobo Chili Pork Tenderloin

Ingredients

Tenderloin

  • 1 1/2 Lbs Pork Tenderloin
  • 1 Tbsp Olive Oil
  • 3 Tbsp Smoked Adobo Chili Seasoning

Chimichurri

  • 1/2 Cup Cilantro Chopped

Chimichurri

  • 1/4 Cup Parsley Chopped
  • 3 Cloves Garlic Minced
  • 1 Tbsp Fresh Oregano Chopped
  • 1/3 Cup Red Wine Vinegar
  • 1 Jalapeño Minced
  • 3/4 Cup Olive Oil
  • Garnish Smoked Adobo Chili Seasoning

Trim the pork tenderloin, removing the connective tissue and excess fat.

Slather the pork in olive oil and then season generously with Smoked Adobo Chili seasoning.

Let the pork rest at room temperature while you preheat your Current grill to 375F.

Combine all chimichurri ingredients in a bowl and stir well.

When the grill is ready, sear the pork, rotating to sear evenly on all 4 sides (about 5 minutes a side).

Continue to cook, rotating occasionally, until the internal temperature of the pork reaches 145F.

Remove the pork from the heat and rest it at room temperature for 10 minutes before slicing.

Serve and finish with a generous drizzle of chimichurri.
