Caribbean Jerk Shrimp Kebabs

Ingredients

Shrimp

  • 2 Lbs Shrimp, Peeled And Deveined (21-25 Size)
  • 2 Tbsp Olive Oil
  • 3 Tbsp Island Spice Seasoning
  • 1 Red Onion
  • 2 Bell Peppers
  • 1 Pineapple
  • 1 Lime
  • 4-6 Stainless Steel Skewers

Thaw the shrimp if necessary and then pat dry with paper towel.

In a bowl, combine the shrimp, olive oil and Island Spice seasoning. Toss to coat the shrimp well.

Cut the pineapple, bell peppers and onion into chunks no larger than the shrimp.

Begin to skewer the kebabs. Start with a piece of onion followed by bell pepper, pineapple and then a shrimp. Repeat this order until the skewer is full, leaving 2” on the bottom and 1” at the top for easy handling.

Once the skewers are assembled, let them rest at room temperature while your Current grill preheats to 500F.

Add oil to the grill and lay down the kebabs so the shrimp are flat on the grilling surface.

Cook for 2-3 minutes and then flip the kebabs.

Cook another 2-3 minutes until the shrimp is fully cooked.

Rest the kebabs at room temperature for 5 minutes before serving.

Garnish with lime wedges and enjoy.
